Light Spinach Frittata With Tomato Salsa

Wonderful homemade frittata and salsa dish perfect for any meal and especially nice for entertaining guests.
Ingredients -

Frittata:
1 tablespoon Extra-Virgin Olive Oil
1 small Onion, sliced
2 cloves Garlic, minced
1 (10 ounces) package Frozen Spinach, thawed and well-drained
2 large Eggs
3 Egg Whites
1/3 cup Fat-Free Evaporated Milk
1/2 cup shredded Reduced-Fat Mozzarella Cheese

Salsa:
4 Plum Tomatoes, seeded and chopped
2 Scallions, minced
1 clove Garlic, minced
2 tablespoons minced Fresh Cilantro
1 tablespoon Fresh Lime Juice
1/4 teaspoon Coarse Salt
1/8 teaspoon Fresh Ground Black Pepper

 
Preparation:

1. Preheat oven to 350 F.

2. Add oil to large ovenproof skillet. Heat over medium heat.

3. Saute onion and garlic 3 minutes until tender.

4. Stir in spinach. Reduce heat to low.

5. Add eggs and egg whites to large bowl. Beat with milk until frothy.

6. Pour egg mixture into skillet.

7. Cook 5-7 minutes until egg mixture is cooked on the bottom and almost firm on top.

8. Sprinkle with mozzarella cheese.

9. Bake in oven 6-8 minutes.

10. Salsa:
11. In a large bowl, combine plum tomatoes, minced scallions, minced garlic, minced fresh cilantro, fresh lime juice, coarse salt and fresh ground black pepper.

12. Serve salsa fresh, at room temperature, over frittata.

You could certainly substitute fresh baby spinach for the frozen spinach called for in this recipe.
