Huevos Rancheros

Tortillas topped with fried egg, sausage, salsa, and cheddar cheese. Perfect for breakfast, lunch or dinner.
Ingredients -

1-1/4 cups Tomato Salsa
1/2 pound bulk Chorizo or Pork Sausage
Vegetable Oil
6 corn Tortillas (6 to 7 inches in diameter)
6 Eggs
1-1/2 cups shredded Cheddar Cheese (6 ounces)

 
Preparation:

1. Cook sausage in heavy skillet over medium heat, stirring occasionally.

2. Drain off fat.

3. Cover skillet and keep warm.

4. Add 1/8-inch oil to small skillet. Heat over medium heat.

5. Cook tortillas in hot oil, turning once, until brown and crisp.

6. Heat salsa in salsa in small saucepan.

7. Prepare fried eggs.

8. Spread each tortilla with 1-tablespoon salsa.

9. Place 1 fried egg on each tortilla.

10. Top each tortilla with salsa, sausage, additional salsa and cheddar cheese.
