Egg Tortilla Scramble With Avocado

Sauteed onion and bell pepper scrambled with egg, fresh cilantro, hot sauce, tortilla chip pieces and salt. Sprinkled with Monterey Jack cheese.
Ingredients -

1 ripe Avocado, pitted, flesh removed and diced
1 tablespoon Vegetable Oil
1/2 cup chopped Onion
1 cup diced Red Bell Pepper
6 Large Eggs
2 tablespoon chopped Fresh Cilantro
3/4 teaspoon Hot Pepper Sauce
1/2 teaspoon Salt
3/4 cup broken Tortilla Chips
1/2 cup shredded Monterrey Jack Cheese

 
Preparation:

1. Add vegetable oil to large skillet. Heat over medium high heat.

2. Saute onion 1 minute.

3. Add red bell pepper and cook 3 minutes, or until vegetables are crisp tender.

4. In medium bowl, whisk eggs with fresh cilantro, hot pepper sauce and salt.

5. Add egg mixture to skillet.

6. Add tortilla chip pieces to skillet.

7. Cook until eggs are set, but soft.

8. Sprinkle Monterrey Jack cheese on top.

9. Remove from heat and cover.

10. Divide mixture among 4 plates. Top with diced avocado.

Jalapeno or Serrano Pepper
For some extra heat, add some finely diced jalapeno or serrano pepper to the egg scramble.
