Southwest Scramble
Ingredients -
8 Eggs
1/4 cup Nonfat Milk
2 teaspoons Chili Powder
2 tablespoons Canola or Olive Oil
1/2 cup shredded Mexican-Style Low-Fat Cheese
3/4 cup mild bottled or Fresh Salsa
1 (16 ounces) can Refried Beans, heated
Flour or Corn Tortillas, warmed
Preparation:

1. Whisk non-fat eggs, milk and chili powder in medium mixing bowl.

2. Heat oil in large skillet. When oil is hot, add eggs. Cook eggs by gently stirring with small spatula, folding them over gently again and again, as they set.

3. Stir in shredded Mexican cheese.

4. Continue cooking eggs until set, but still moist.

5. Plate eggs and top with salsa.

6. Serve hot with sides of refried beans and warm tortillas.
